Hot Chicken Salad
Warm up a winter day with this delicious version of chicken salad.
2 C cooked chicken breast, diced
2 C celery, chopped
½ to 1 C pecans, chopped
1 C mayonnaise
½ tsp. salt
½ tsp. pepper
3 Tbsp.onions, chopped
2 Tbsp. Worcestershire sauce
2 Tbsp. lemon juice
1 C grated cheddar
½ cup plain potato chips, crushed
½ cup barbecue potato chips, crushed
In a mixing bowl, combine chicken, celery, pecans, mayonnaise, salt, pepper, onion, Worcestershire sauce, lemon juice and cheese. Spoon into a lightly greased 2-quart casserole dish. Sprinkle potato chips over top. Bake for 20 to 25 minutes at 350°.
